🛒 Ingredients

  • 3 pieces Large Sweet Potatoes
  • 4 tbsp Unsalted Butter
  • 2 tsp Sugar
  • 1 1/2 cups Smoked Gouda Cheese
  • 1/2 cup Heavy Cream
  • 2 cups Shallots
  • 3 sprigs Fresh Thyme
  • 1 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Bread Crumbs

👨‍🍳 Instructions

  1. 1

Step 1: Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork several times and bake for 45-50 minutes, or until tender when pierced with a fork.

  2. 2

Step 2: In a separate pan, melt 2 tablespoons of unsalted butter over medium heat.

  3. 3

Step 3: Add the sugar, salt, and pepper to the pan and stir to combine.

  4. 4

Step 4: Add the shallots to the pan and sauté for 5-7 minutes, or until caramelized.

  5. 5

Step 5: In a separate saucepan, melt the remaining 2 tablespoons of unsalted butter over medium heat.

  6. 6

Step 6: Add the heavy cream to the saucepan and stir to combine. Bring the mixture to a simmer and cook for 2-3 minutes, or until slightly thickened.

  7. 7

Step 7: Stir in the smoked gouda cheese until melted and smooth.

  8. 8

Step 8: Remove the sweet potatoes from the oven and let cool for 5-10 minutes.

  9. 9

Step 9: Slice the sweet potatoes into 1/2-inch thick rounds.

  10. 10

Step 10: In a greased 9x13-inch baking dish, create a layer of sweet potato slices, then a layer of the cheese sauce, and finally a layer of caramelized shallots. Repeat the layers two more times, ending with a layer of cheese sauce on top.

  11. 11

Step 11: Sprinkle the bread crumbs over the top layer of cheese sauce.

  12. 12

Step 12: Bake the gratin in the preheated oven for 20-25 minutes, or until the top is golden brown and the sauce is bubbly.

  13. 13

Step 13: Remove the gratin from the oven and let cool for 10-15 minutes before serving.

💡 Pro Tips

To prevent the gratin from becoming too brown, cover the top with foil for the last 10-15 minutes of baking. Also, be sure to let the sweet potatoes cool slightly before slicing, as they will be easier to handle.
