A vegan twist on the classic American snack, these smoked paprika stuffed jalapeño poppers are a flavor bomb that's crunchy on the outside and spicy on the inside.

- 1 cup 1 cup corn kernels
- 1/2 cup 1/2 cup vegan cream cheese
- 1/4 cup 1/4 cup chopped scallions
- 2 cloves 2 cloves garlic
- 1 tsp 1 tsp smoked paprika
- 1 tsp 1 tsp cumin

- 12 pieces 12 large jalapeños
- 1 cup 1 cup all-purpose flour
- 1 cup 1 cup breadcrumbs
- 1/4 cup 1/4 cup nutritional yeast
- 1 tbsp 1 tbsp olive oil

Cut off the stems of the jalapeños and carefully scoop out the seeds and membranes.
