A unique twist on traditional gnocchi, this dish features soft and fluffy smoked sweet potato dumplings tossed in a rich and spicy pumpkin sauce, all while being fully plant-based.

- 3 large Sweet potatoes
- 2 cups All-purpose flour
- 1/2 cup Rice flour
- 2 tsp Nutritional yeast
- 1 tsp Salt
- 1 cup Pumpkin puree
- 1/2 cup Canned pumpkin
- 2 tbsp Vegan butter
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1/4 tsp Smoked paprika
- 1/4 tsp Black pepper
- 1/4 tsp Red pepper flakes

Step 1: Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork a few times, and bake them in the oven for about 45-50 minutes, or until they are tender when pierced with a fork.

Step 2: While the sweet potatoes are baking, combine the all-purpose flour, rice flour, nutritional yeast, and salt in a bowl.

Step 3: Once the sweet potatoes are done, let them cool down for a few minutes, then peel them and mash them in a bowl.

Step 4: Add the mashed sweet potatoes to the bowl with the flour mixture, and mix until a dough forms.
